Real oscypek
Oscypek is the smoked, spindle-shaped Tatra cheese, EU-protected and made from at least 60% sheep's milk. The sheep are milked May to September, so the real one is a summer and autumn thing; many year-round 'oscypki' are cow's-milk look-alikes.
When: Any time; real ones are made May to September and sold into October.
